Hello Cooking enthusiast I am Angela Steffi. I am originally from Nagerkoil (TamilNadu, Southern part of India). When I was a young kid I was always interested in cooking mainly because I was more passionate about snacks and desserts. My mom used to make these treats every weekend but I would finish them as soon as they got of the pan. After finishing all these snacks I would always want more and the best way to ensure that I had enough was to make it myself. I started learning more and more recipes and soon enough whenever my friends visited me I started cooking for them.(sweets and snacks).

Then as all Indian children, I joined a college in Chennai to study my Bachelors of Engineering in Electrical and Electronic Engineering. I was staying in a hostel and it was during these 4 years that I realized the taste of my mother's home recipes. Whenever I went home during holidays I would relish on the food which my mother made. I also used to take some food for my friends in Chennai who were also longing for home cooked food.
At that juncture, some of my friends had rented a house in Chennai to study from there and they were totally clueless about cooking. Even though there are a lot of street food shops in Chennai, many flood the dish with oil or butter and add too much spice to mask the lack of flavor in their dish. So they would smuggle me out of hostel during weekends and I used to cook at their place. It was my first kitchen, I was the head cook, they would cut onions and vegetables for me and I put together a lot of recipes. So now whenever I went home, I started learning the gravies and curries and traditional recipes in South Indian Cooking. Then I would make these dishes during the weekends for my friends. That is when my cooking transitioned from snacks and sweets to preparing a full meal.
I graduated college after 4 years and joined HCL as Software Engineer, again the job was in Chennai. I was staying in a hostel and the mess there was horrible. I was picked up by the company bus at 6.30 AM and I came back home at 8.00 PM. Life was horrible, the food at the mess made it even worse. During all these years, my best friend Raji(who was working in the same company) brought me Lunch everyday. Her mom packed 2 lunch boxes, one for her and one for me. Everyone at the company also used complain about how much they hated the food there and how much they long to go back home to enjoy a good meal. I experienced and understood the importance of home cooked meal.
Two years flew by, I got married and moved to Dallas, Texas. My mother-in-law is an amazing cook. My hubby had huge praise for his mom's cooking. I immediately knew what I was up against. My mother-in-law is a very kind and gentle woman she taught me all her "secret" recipes. I learn't a lot from her. Now I am in Dallas, in my own kitchen where I am the Master Chef. I carefully built by the kitchen selecting every utensil and appliance. My hubby really appreciated my cooking always helped in prepping the food and cleaning the dishes. I also met some couples in our community who were struggling in the Kitchen. We used to invite them during home parties and they were all huge fans of my cooking. They used to ask for every recipe and made notes of them.

That is when my hubby encouraged me start making recipe videos for Youtube. I started my cooking channel in English Classic Masala Hut a couple of months later I started another cooking channel in Tamil Madras Samayal . I was first hesitant about making videos, I was shy and was afraid of negative comments but my hubby encouraged me to go on with it. When I got my first 100 subscribers he presented me a DSLR. I didn't know how to operate it first and then there were lots of lenses for photography. This was all new for me and I had slowly drifted into the world of food blogging.
Almost 9 months later, I had a total of 20,000 subscribers and I was really happy. Many of them would ask for additional recipes or some measurements and that is when Steffi's Recipes was born, to act as a hub for both traditional and western recipes, providing detailed ingredients list and cooking tips.
Traditionally Indian cooking recipes are passed on from mother to daughter, I have learnt several authentic recipes from my mother, grand-mother and my mother-in-law. I have also traveled to various places and tried several cuisines. I enjoy tasting food from street vendors to star-hotels. Each time I taste a different dish, I try to make the dish at home and vary the ingredients. I have made a careful record of these home-tested recipes. I enjoy cooking and tasting food. I have been cooking for more than 15 years. Cooking is my passion and I always enjoyed making new recipes from different cuisines.
I just started this blog a few months ago and so it may not have all the recipes that you are looking for. But I will be adding several new recipes every week and sure the recipes blog will grow. Angela I have a request.. could you please make chettinad chicken curry.. I had this at an indian restaurant here in West Chester Pensylvannia and ever since then I am trying to make chettinad chicken curry but it has never turned out right. Hoping you can help!Thank you. DeleteHi Steffi...i have been following your videos in youtube for quite sometime and i must say you upload some of the best recipes of south india. I have a question for you. I stay in the US and i am confused with the types of mutton(lamb & goat) they sell here. I am looking for taste and texture like how we get in india(chennai). Which kind of mutton do you recommend which is similar to what we get in chennai? And they sell in various types like goat leg and thigh, goat mix etc. It would be great if you could answer my questions. Happy Cooking :)
ReplyDeleteThe lamb we get in grocery stores(usually from New Zealand) have a higher fat content and therefore are not suitable for biryani and curries but they taste best when roasted. However there are Indian and hispanic stores which sell goat meat from Mexico these are the ones we get in India. Goat mix has a lot of small bones and cartilages making it ideal for biryani and curry. While the leg of goat has one large bone which can be easily removed and used for boneless fry varieties.

ReplyDeleteThank you so much. The cake i made weighed about 1.5 kg you can double the quantity,if you make 3 kg cake in 1 batch it will be very hard to get it cooked evenly and will take long time to bake which will result in a very dry cake.

DeleteHi Angela! My husband and I LOVE your butter chicken recipe. I have been to all the Indian stores in my area but cannot find Kashmiri chilli powder. Do you have a substitute or alternative powder blend that results in the same flavour? I've tried using different blends and the butter chicken comes out pretty good but none of them taste exactly like traditional butter chicken. Any substitute suggestions would be greatly appreciated!

ReplyDeleteKashmiri chili powder is added to impart nice color to the recipe and at the same time they are less spicy you can substitute kashmiri chilies with a mixture of Cayenne pepper and paprika (1 : 4 ratio) to get both heat and color.

Hi Steffi, I accidently came across your YouTube posting last week. Found very interesting recipes. I made Munthri kothu and came out perfectly well. I used pepper powder and roosted cumin powder instead ginger powder.

I have some suggestions. About 8.7% of adult Indian population are diabetic (International Diabetic Federation SEA). Which is really high. You can suggest alternatives to high calorie ingredients in the menu.
Suggest food calorie value for your preparations whenever possible. An useful website I found was http://southindianfoods.in/south_indian_food_caloriechart.html
Mention about the number of portion or to how many it is prepared for.
I recently made Adai dosai. I used the exact quantity you have mentioned but it became excess for two of us as I was unsure how many I can make! Your idea of mixing lentils is excellent as it provides most of the essential amino acids, a healthy option especially for vegetarians.
We use lot of spices in our preparations. Whenever possible You can mention about the medicinal value about the spices and in general about the nutritive value of our food.
You kitchen is nicely arranged and one of the clean kitchens I have seen in most Chef shows!
I have made your Chicken Kulambu. This is the first time I have tried and it came out well. However we found it too spicy. I have used the the exact proportions you have mentioned. Perhaps the heat index of the chilly powder we get here may be high I thing. One should be gentle on the chillies specially when you are mixing Chilli powder, green Chillies and Black pepper!
Another suggestion is about the measurements. Cup and spoon measurements are fine for general cooking. However as you are aware an US cup measurement is not the same the metric cup or an Australian cup for that matter. Saying it with weight equivalent will be good specially when you are baking!

My boyfriend stayed lavishly on company expenses (Thus never having to cook for himself) for 3 years before he joined me for graduate school. We both share a common love for food but used to hate the effort of making it. We stumbled upon your website and think it is awesome! The recipes are easy, most of the ingredients are usually available at home (so we don't have to make a trip to the store just because we decided to make something out of the ordinary) and most importantly your recipes have never failed us so far! As I am myself an I T guy , I would strongly suggest you to continue with this new field that you are currently in. Keep innovating and try fusing the Mughalai with traditional Brahmin recipes of South India.
It was exactly this what the Khaansamas ( Master Chefs in urdu/persian) in the kitchens of the Moghuls/Nawaabs used to experiment and produce. Believe me they were rewarded with what an IT guy cannot even dream of. Now that profession/recipes are lost but you have re-incarnated that profession knowingly or unknowingly. Keep innovating and uphold the traditional cuisine of India.

I have one request. In West Indies we don't get much of raw spices.So we use powder(chilli,corriander,jeera etc). When u tell ur secret masala recipe, can u also tell how much spoon of powder also. Because it is hard for me to decipher,how much powder of each spices to add equalling to ur secret recipe. Tat would really be helpful.

I need the procedure for preparing chicken gravy for 150 children (50gm piece each with idiyappam) to be done next sunday.

Hi Steffi sister, your recipe videos are awesome. You became my inspiration. I tried most of ur recipes n all came out so tasty. I am gonna try cooker cake for the first time. I've a doubt sister. You told not to use cooker weight, whether we should use that rubber gasket?
